Four ingredients are essential to the production of Parma-style ham: Italian pigs, salt, air, and time. Unlike many other hams, this is an all-natural ham; additives such as colourings, nitrites, and nitrates are prohibited by the strict rules of the Consorzio del Prosciutto di Parma for the authentic product.
